Fish burgers

Only 31 Martha recipes to go and our review of The Martha Stewart Living Cookbook: The New Classics will be o-ver! Confession #1: I can’t wait. Confession #2: I just looked at the Table of Contents again and made an executive decision to eliminate the “pastries” chapter from this review. We’re now officially down to 29 recipes — take that, Marth-dawg!

Last night’s recipe was a totally delicious shrimp and cod burger from the “sandwiches and savory pies” chapter. I know some of you don’t like fish (ahem, Dad) but this delicious, moist, savory burger was the perfect light, healthy, spring-y alternative to heavy beef.

As an additional bonus, if you use the pre-shelled and de-veined medium shrimp from Whole Foods like I did, these burgers are really easy and fast to make (though you do need a food processor). Unfortunately, I may have overprocessed the mixture — and the recipe warns against this, too — next time I will endeavor to include more chunks of shrimp and cod. I grilled the burgers in my trusty grill pan, 3 minutes per side, though they would be delicious cooked over a charcoal bbq. I loved the moist, delicate texture, not too solid, yet not falling-apart messy, enlivened by the contrasting tang of lemon juice and capers. The recipe calls for tarragon tartar sauce on the side, but I skipped it and didn’t feel at all deprived.

    As a not too frequent fish eater, I have to admit your photo intrigues me. I’m always concerned about fishiness and fishy flavors … was it?

    Hi Dad,
    No, I didn’t think the burger was fishy at all — rather, it was lively and fresh with lots of parsley, scallions, capers and lemon juice.

    Chris is having a leftover burger for lunch today. Perhaps he’ll weigh in…

    The fish burger was not at all fishy, left over or otherwise. But I must confess that in my packed lunch version I missed the toasted bun and the mayo. Also — it was just better hot; the texture was drier and the flavor less pronounced after the time in the fridge. Final verdict on the hot fresh fish burgers is very positive, though — I look forward to having them again!
