Peanut butter me up

Peanut butter and chocolate are a classic combination, but one not often found in cake. So, I was greatly intrigued by the Barefoot Contessa at Home’s chocolate cupcakes and peanut butter icing. I made them yesterday for a friend’s party, and they were devoured to the last crumb. People actually sought me out to compliment the cupcakes!
The cake, a basic cocoa-powder chocolate version, kept moist with buttermilk and sour cream, was light and fluffy, though not as chocolatey as I would have liked. The frosting was the real star, slightly salty, sweet and peanut-buttery, just like the inside of a peanut butter cup.
In classic Barefoot Contessa style, there is nothing even remotely healthy about this recipe, unless you consider that the cupcakes were baked from scratch, with no preservatives or high fructose corn syrup. But they are a delicious treat, and the peanut butter icing makes them different enough to be special. I wonder how a combo of Deceptively Delicious’s avocado-chocolate cupcakes and peanut butter icing would be?

I was lucky enough to taste the peanut butter me up cupcake and wanted you to know that it was absolutely delicious. It was light but yet had the rich, full chocolate/peanut butter flavor that I didn’t want to end! The frosting was a bonus.
