Between the bread

Grilled cheese the Deceptively Delicious way calls for pureed butternut squash or sweet potato mixed with grated cheese and spread between whole wheat bread before toasting in a hot pan. Author Seinfeld says, “It sure looks like your average American grilled cheese.” And it does. But it doesn’t taste like it.

The sweet butternut squash puree simply overwhelmed the cheese, while the mixture oozed out of the sandwich, making it messy to eat. On the positive side — the recipe calls for spraying the bread with cooking spray before grilling — much better for you than butter — and it created a satisfyingly crunchy exterior.

For those who’d like to try this recipe, here’s a tip: slightly warm your butternut squash puree before making the sandwiches. I did not and the exterior of my grilled cheese cooked too quickly so that I was left with extra-toasty bread and an ice-cold filling.

    I like grilled cheese with sliced tomato and onions inside. I bet even kids would eat it with thinly sliced tomatoes (but maybe not the onions). It’s even better on rye, and dark rye in particular. This, with pickles on the side, and cottage cheese with dill and pepper on top, is my secret single food you asked about earlier (or at least one of them).

    That child is demonic. Despite the “Bad Seed” look about her, reading this is making my mouth water.
    Sounds delicious! Aren’t those spray oils bad for you? I think Dr. Weil would not approve, but one of those pumps that sprays olive oil could be just as useful?
